En español se traduce como, El ojo de la costilla , también conocido como el filete de whisky (en Australia y Nueva Zelanda), es un filete de carne de la costilla de vacuno. Cuando se corta en filetes, el Ribeye es uno de los más populares, jugosos, y caros en el mercado. La carne de la sección de la costilla es más blanda y más grasa (la carne se dice que es "de mármoleo") que la mayoría de los cortes de carne de vacuno. Esta grasa adicional hace del Ribeye un filete asado especialmente tierno y de sabor agradable y bien adaptado a la cocina de calor seco.

El Ribeye se puede cortar sin hueso o con hueso; un "hueso en Ribeye" (a veces llamado "Ribeye cow boy") es sinónimo de un bistec de costilla. Los recortes son idénticos; una justificación a veces se utiliza para dejar el hueso en que la humedad y grasa junto con el hueso mejorará el sabor, aunque la inclusión de los huesos también puede ser utilizado para inflar el peso de la carne.

La sección de la costilla de la carne de las costillas se extiende de seis a doce años. Filetes Ribeye son en su mayoría compuesta por el músculo dorsal largo, pero también contienen el Complexus y SpinaliS músculos.
