El cuchifrito (denominado también como cochifrito) es un plato tradicional de la cocina castellana compuesto de carne de cordero o cabrito (denominado: 'chivo') en algunas ocasiones se elabora con carne de cerdo. Se trata de un plato de origen pastoril que se sirve caliente.

Características y Servir

La carne empleada, a medio guisar (a la que se le suele verter vino para que ablande), se suele acabar friendo con aceite de oliva en una sartén con abundante cantidad de ajos, vinagre y especias: perejil, romero, laurel, hierbabuena, etc.
